Grandma's 3D Muffins

This muffin recipe was developed for my podcast Friends with Food. Give it a listen! In this particular episode, Phoebe’s Grandma passes away while they are at the store picking up yogurt and eggs. I like to think they were gathering ingredients for these muffins! I included red and blue fruit (raspberries and blueberries) to represent Grandma Francis’s love of all things 3D, as evidenced by the 3D glasses on the faces of the bereaved at her funeral (above). These jumbo bran muffins are also a nod to 90s café culture. Enjoy!
Grandma’s 3D Muffins
2 eggs
1 cup sugar
1 tsp vanilla
1 cup greek yogurt
½ cup extra virgin olive oil
Zest of one lemon
⅓ cup lemon juice
1 tsp salt
1 ¼ cup flour
1 cup wheat bran, oat bran, or wheat germ
3 tsp baking powder
1 ½ cup frozen raspberries
1 ½ cup frozen blueberries
Turbinado sugar for dusting
Preheat oven to 350F. Line a jumbo (or regular) muffin tin with paper liners.
Whisk eggs and sugar together in a large bowl. Add vanilla, greek yogurt, olive oil, lemon zest and juice, whisking after each addition until combined. Add salt, flour, bran, and baking powder, whisking thoroughly to combine. Fold in frozen fruit. Spoon batter into jumbo (or regular) muffin cups, filling nearly to the top (these don’t rise much during baking), and sprinkle the top with turbinado sugar. Bake until golden brown on top and a toothpick inserted into the center of the muffin comes out clean. This will take about 25-40 minutes for jumbo muffins and 15-20 minutes for regular muffins. Enjoy warm muffins, perhaps split open with a pat of butter. 3D glasses optional.
