Grandma Buffet’s 3D Muffins
2 eggs
1 cup sugar
1 tsp vanilla
1 cup greek yogurt
½ cup extra virgin olive oil
Zest of one lemon
⅓ cup lemon juice
1 tsp salt
1 ¼ cup flour
1 cup wheat bran, oat bran, or wheat germ
3 tsp baking powder
1 ½ cup frozen raspberries
1 ½ cup frozen blueberries
Turbinado sugar for dusting
Preheat oven to 350F. Line a jumbo (or regular) muffin tin with paper liners.
Whisk eggs and sugar together in a large bowl. Add vanilla, greek yogurt, olive oil, lemon zest and juice, whisking after each addition until combined. Add salt, flour, bran, and baking powder, whisking thoroughly to combine. Fold in frozen fruit. Pour batter into jumbo (or regular) muffin cups and sprinkle the top with turbinado sugar. Bake until golden brown on top and a toothpick inserted into the center of the muffin comes out clean. This will take about 25-40 minutes for jumbo muffins and 15-20 minutes for regular muffins. Enjoy warm muffins, perhaps split open with a pat of butter. 3D glasses optional.
